Weigh in Wednesday




I didn't lose any weight this week, but that's okay! This week I decided to share a couple of my favorite recipes with you!
Bean & Cheese Burrito (It's yummy!)
Ingredients:
1 Tortilla wrap (whole wheat or light version if possible)
2 tablespoons green onion
1 tsp. canola oil
1/3 dry cup, fat free refried beans
1 cup fat free shredded cheddar cheese
1/2 dry cup shredded lettuce
2 tablespoon salsa

  • Preheat oven to 350 degrees
  • Wash & Chop onion
  • Heat the oil in a small skillet
  • Add onion and stir frequently until tender.
  • Reduce heat to medium, add refried beans, stir until heated through.
  • Spoon the bean mixture into a tortilla & sprinkle with the shredded cheese
  • Fold it up & place on a cookie sheet, sprayed w/nonstick spray
  • Bake 10 minutes
  • Serve w/lettuce and salsa.
  • Enjoy fruit for desert

Nutritional info--

400 calories, 10 grams of fat, 730mg sodium, and 10 gr. fiber

Another great recipe that is easy & taste good!

For this recipe you could use turkey cutlets, boneless skinless chicken, or boneless pork chops

Ingredients:

4-5 turkey cutlets (ect.)

2 cups of thinly sliced or shredded potatoes

1 can of low-sodium, low fat Cream of Chicken Soup

salt & pepper to taste

  • Preheat oven to 350 degrees
  • Brown meat in a skillet sprayed w/non-stick spray lightly
  • Put the meat in the bottom of a baking dish
  • Cover meat with the potatoes
  • Sprinkle with salt & pepper
  • Spread cream of chicken soup over potatoes
  • Cover with aluminum foil & bake 1 to 1 1/4 hours or until the potatoes are lightly browned, and the meat is cooked through!
  • Enjoy a salad w/fat free dressing on the side & fruit for desert!

I'm not sure what the exact nutrition values are for this recipe, but I recommend using the leanest meat & watch your portions. I know for a fact that this recipe has less than 10 grams of fat in it, per serving! And it really does taste good! And my whole family likes it!
