Ingredients:
- Baguette Bread (cost me $1.29 at Kroger)
- Extra-Virgin Olive Oil as needed, less than 1/2 cup (got this for under a dollar awhile back)
- 1 tablespoon balsamic vinegar (Also got this for $.52 at Meijer awhile back)
- Fresh Basil (Free from the garden)
- 2 tomatoes (Free from the garden)
Preheat Oven to 400 degrees ( or whichever needed for the baguette you have.) Chop tomatoes into small dices. Finely chop basil. Combine tomatoes, basil, and balsamic vinegar into a small bowl. Set aside for flavors to combine.
Cook bread 6-15 minutes or until slightly browned or done. Cut bread into small slices. Brush a thin layer of olive oil on one side of the bread, and top with the tomato-basil mixture. You can also use salt & pepper to taste. Serve while the bread is still warm. Set back into the oven for a minute if needed to reheat the bread!
My daughter was the only one of my three kids that would even try this! And she gave it a thumbs up! She says," that thumbs up means it's really good!" She actually ate 3 small slices!
