Writing and sticking to a Menu Plan will save you a lot of time & money! It also eliminates the most annoying question, "What's For Dinner?" Here's our plan this week! I'm all about quick, easy, simple meals! We eat from what we have on hand, what's on sale & with coupons!
Monday - Chili 3-ways (aka. homemade Goldstar chili - chili, speghetti, and cheese)
Tuesday - Shepard's Pie
Wed - Easy Chicken Quesadilla's (Recipe below), Fruit
Thursday - Stuffed chicken breasts (chicken cordon blue), Betty Crocker boxed potato's, veggies, and crescent rolls
Friday - Homemade pizza's
Saturday - Grilled out Hamburgers, Hot dogs, veggies
Easy Chicken Quesadilla's
Ingredients:
*Chicken - can be left over chicken shredded or in strips, or use refrigerated southwest seasoned chicken breast strips 9-12 oz. package. We like Purdue shortcuts.
*Shredded cheese - mexican blend preferred, but whatever you like, mozzarella, cheddar, colby-monterey Jack cheese blend ect.
*Soft flour tortilla's
*Cooking spray
*Sour cream, refried beans, or salsa optional
1. First, spray skillet with cooking spray & add 1 tortilla. Spread chicken & cheese onto the tortilla. Top with another tortilla.
2. Cook uncovered on medium heat 4-6 minutes, carefully flipping after 2 minutes, or until golden brown.
3. Remove from heat & cut into wedges using a pizza cutter. Repeat until you have enough for your family.
4. Serve with sour cream, refried beans, salsa, if desired.
*You can add additional toppings if you prefer, but my kids are very picky!
