Meal Plan Monday!


I am the type of person that I like easy, simple meals, and spending as little time as possible in the kitchen cooking & cleaning up after cooking, especially in the hot summer days! I also received a comment last week, asking me if I sometimes make more than one main entree? The answer is, Yes I do on occasion. My kids are very picky eaters! You'll notice that most of the meals we make are very plain because of that reason! I also base my menu plan on what's on sale & what I have in my stockpile to help stretch our dollars!

Here's our menu plan for this week- I'm not listing in any particular order because we sometimes have a hard time sticking exactly to the plan, well except for Pizza Friday - this happens every week!

Grilled BBQ Chicken Wraps, with sour cream, side salad, and grilled zucchini slices- from my garden! ( recipe for zucchini came from All You mag, listed below)

Hamburger Helper & french fries

Breakfast for Dinner - Eggs, biscuits w/ gravy, homemade fried potato's

Pizza Friday - My kids want to try this Beanie Weenie pizza (minus the onion & tomato's they won't eat those!)

Chicken Fettuccine & Cheesy Garlic Bread (except we'll use regular bread slices)


Easy Crock-Pot Roast, mashed potato's, steamed carrots, broccoli, and zucchini (Veggies are from the garden!)

I'm also going to make Bruschetta this week, using tomato's & herbs from the garden! I'll make this for lunch for myself one day-the kids won't eat it! I'll try to post this recipe later this week!

Grilled Zucchini

1. Cut the zucchini thinly sliced lengthwise.
2. Mist zucchini slices on both sides with cooking spray & sprinkle with salt.
3. Grill, turning after 4 minutes, until cooked through, about 8 minutes.
