Easy Bruschetta Recipe

I decided to make this super easy recipe for Bruschetta and it turned out Great! I used it on bread, but it also goes great on grilled chicken!






Ingredients:

• Baguette Bread (cost me $1.29 at Kroger)
• Extra-Virgin Olive Oil as needed, less than 1/2 cup (got this for under a dollar awhile back)
• 1 tablespoon balsamic vinegar (Also got this for $.52 at Meijer awhile back)
• Fresh Basil (Free from the garden)
• 2 tomatoes (Free from the garden)

Preheat Oven to 400 degrees ( or whichever needed for the baguette you have.) Chop tomatoes into small dices. Finely chop basil. Combine tomatoes, basil, and balsamic vinegar into a small bowl. Set aside for flavors to combine.

Cook bread 6-15 minutes or until slightly browned or done. Cut bread into small slices. Brush a thin layer of olive oil on one side of the bread, and top with the tomato-basil mixture. You can also use salt & pepper to taste. Serve while the bread is still warm. Set back into the oven for a minute if needed to reheat the bread!

My daughter was the only one of my three kids that would even try this! And she gave it a thumbs up! She says," that thumbs up means it's really good!" She actually ate 3 small slices!

On another note:

She looks like a wild woman in this pic, and to know that in the am I did her hair all pretty & dressed her in something else. But my 5 year old daughter has a mind of her own, and decides to change her hair & clothes the way she wants it, usually umpteen (being sarcastic) times a day! My mother just laughs at me & says, "You wanted a daughter, you got one!" But- It's Okay, I love my daughter anyway!

Meal Plan Monday!

I am the type of person that I like easy, simple meals, and spending as little time as possible in the kitchen cooking & cleaning up after cooking, especially in the hot summer days! I also received a comment last week, asking me if I sometimes make more than one main entree? The answer is, Yes I do on occasion. My kids are very picky eaters! You'll notice that most of the meals we make are very plain because of that reason! I also base my menu plan on what's on sale & what I have in my stockpile to help stretch our dollars!

Here's our menu plan for this week- I'm not listing in any particular order because we sometimes have a hard time sticking exactly to the plan, well except for Pizza Friday - this happens every week!

Grilled BBQ Chicken Wraps, with sour cream, side salad, and grilled zucchini slices- from my garden! ( recipe for zucchini came from All You mag, listed below)

Hamburger Helper & french fries

Breakfast for Dinner - Eggs, biscuits w/ gravy, homemade fried potato's

Pizza Friday - My kids want to try this Beanie Weenie pizza (minus the onion & tomato's they won't eat those!)

Chicken Fettuccine & Cheesy Garlic Bread (except we'll use regular bread slices)


Easy Crock-Pot Roast, mashed potato's, steamed carrots, broccoli, and zucchini (Veggies are from the garden!)

I'm also going to make Bruschetta this week, using tomato's & herbs from the garden! I'll make this for lunch for myself one day-the kids won't eat it! I'll try to post this recipe later this week!

Grilled Zucchini

1. Cut the zucchini thinly sliced lengthwise.
2. Mist zucchini slices on both sides with cooking spray & sprinkle with salt.
3. Grill, turning after 4 minutes, until cooked through, about 8 minutes.

Coupon Preview & Reminder

We are getting 5 inserts this week! Yeah, you heard right-5 inserts! This week is the week to stock up on coupons! Whoo-hoo! We'll be getting 2 Smart Source inserts, 1 Red Plum insert, 1 P&G insert, and 1 Kellogg's insert! You can preview the full list at Taylortown preview or The Coupon Clippers! Click on Tracker to view the upcoming coupons! While your there you can order a few of your favorite coupons for a small handling fee!

If you plan on purchasing several newspapers just for the coupons, remember that the inserts vary by region, and remember that they are not guaranteed! Check each newspaper to make sure that the inserts are there, and even flip through the inserts if you are looking forward to a particular coupon, before buying them.

*Blink tears $4 off - Great for the sale this week at CVS!
*Ragu $.60/2 - Great inexpensive spaghetti sauce!
*Skippy PB $.60 off - After this coupon doubles, and a great sale for inexpensive PB.
*Tons of great Kelloggs coupons! Poptarts, Eggo's, cereal, cookies, and more!
*$.50 off Crest toothpaste - Possible Free toothpaste
*Bounty towels or napkins $.25 off - Get these inexpensive with a sale
*All the normals, razors, pampers, and lots more!

I always recommend getting an even number of newspapers, because of BOGO sales ect. (minimum 2 newspapers a week) I also recommend checking each insert before purchasing several- you are not guaranteed coupon inserts, and also as a reminder, the coupon values can vary by region. For instance I might get a coupon for $.55/1 and you get the coupon for $1/2.

I would recommend stocking up on newspapers this week! I'll probably get between 8-12 newspapers this week! Why so many? There are a lot of great coupons this week!
